Sugar-Free Cookies

Oatmeal Cookies with Raisins and Walnuts

Ingredients:

1-1/2 c. rolled oats (not quick oats) steel cut oats gives more fiber
2/3 c. butter, melted
4 egg whites
1 c. Splenda
® (or any SF replacement that can be heated)
1-1/2 c. all-purpose flour (or use 3/4 c. almond flour and 3/4 c. soy flour - this is a better choice than white refined flour)
1/2 tsp. salt
2 tsp. baking powder
1/2 c. milk (or unsweetened soy milk to lower the carbohydrates)
1 tsp. vanilla extract
1/2 c. raisins
1/2 c. chopped walnuts

Directions:

Preheat oven to 375 degrees. Grease cookie sheets with cooking spray. Stir together the oatmeal and margarine. Blend in the egg whites and sweetener. Stir together the flour, salt and baking powder; add to the mixture alternately with the milk and vanilla stirring between additions. Stir in the raisins and walnuts.  Drop by teaspoonfuls 1-2 inches apart onto the prepared cookie sheets. Bake for 10-15 minutes.
